Syrah, also known as Shiraz in Australia, does not mind the heat. Its bud break is relatively late, it grows vigorously with a spreading habit, and it ripens in the mid season. It is most famously used in reds from northern Rhone regions, Cote Rotie and Hermitage, but it also forms the backbone of southern Rhone blends, including Chateauneuf du Pape.
Syrah is adaptable and requires heat to fully ripen, but it must not be allowed to get even slightly over-ripe or its varietal character will be lost. This berry is thick skinned and almost black, yielding a deep violet wine with a chewy texture, a richness, and spicy overtones. Syrah is also a favorite blender due to its deep color and fruity aromas without being overly tannic.
