Petit Verdot is a role player in the classic red wines of Bordeaux, and is generally used in small amounts (less than 10%) to provide structure, color and spiciness to these fabulous blends. In California and Australia, Petit Verdot has been increasingly used to create big, dark, highly flavored single varietal wines. However, the grape ripens very late in the season and often does not ripen at all in Bordeaux. We expect the same in Eagle Valley, but we'll see.
